Fried Green Tomatoes
Made from unripened fruit, fried green tomatoes are known today as a Southern side dish, but this was not always so. Beginning with end-of-season still-green tomatoes on the vine right before the first frost, the question was what to do with them. Enterprising cooks made a side dish of cornmeal, tomatoes, and seasoning that many love today, but before the Southern cuisine came Jewish cuisine which used the green tomatoes as a breakfast dish.
