Horizon Resort and the Heart Walk
Horizon and its sister properties continue to raise awareness
and support for Heart
Walk, an organized grass-roots effort to fight heart
disease in all age groups. Our company-wide participation
includes many activities such as rubber-duck races to raise
funds, and then at the end of the year, our teams, who have
collected sponsorships through the summer, will walk in the
community-wide Heart Walk
event. If you would like to contribute to our Heart Walk effort or help

Our night auditor Wayne Smith has been with the company
for 12 years, an anniversary date that he marked recently with
his usual cool style until his colleagues launched forth with
accolades and commendations!
During his years spent
working with both our sister property Grande Shores and
Horizon, Wayne has solved numerous problems and earned the
respect of staff, management, and guests alike. Words of
congratulations have flowed freely to Wayne in the days
following the anniversary announcement, words such as

always make me smile," "You are an asset to our

of Grande Shores and Horizon!"
Reliable,
friendly, helpful, efficient, and organized are only a few of
the words that define Wayne. Guests, some of you might know
Wayne from one or more of your stays with us. If he

Featured Recipe - Pretty Summer Peach
Soup
Summertime has many magical effects on people. For example,
some appetites fade in heat, but eat we all must do to stay
healthy. While cold soup might not sound appetizing at first,
a little taste of this particular peach soup can make even the
most ardent opinion change. Delicious, satisfying, healthy,
and cooling. Just right for summer, no matter how much you
feel like eating!
By the way, children love this soup
because it reminds them of "smoothies." The recipe takes 10
minutes to make once all the ingredients are assembled.
Ingredients:
- 1 cup fresh raspberries (try to find farmers' markets or
grocers selling fresh raspberries before you yield to buying
frozen, thawed ones)
- 3 cups fresh peaches (use frozen if you must, but here
in the Carolinas, peaches are in season now)
- 3 tablespoons fresh lemon juice
- 1 cup peach nectar
- 1 cup plain good-quality yogurt
- 1/4 cup finely ground sugar
- 1 teaspoon almond extract
Directions:
- Place the raspberries in a blender. Cover and process
until smooth.
- Strain and discard seeds.
- Cover and refrigerate the raspberry puree.
- Peel the peaches and remove the pits. Slice. Place the
peeled peach slices with the lemon juice in a blender. Cover
and process until smooth.
- Transfer the peach puree to a bowl. Stir in the peach
nectar, yogurt, sugar as needed (taste for tartness) and
almond extract.
- Cover the mixture and refrigerate for 2 hours.
- Garnish the mixture as shown in the photo by drizzling 1
tablespoon raspberry puree in a 3 in a circle on top of each
serving. Then, using a toothpick, draw six lines toward the
center of circle. This motion should form a flower design.
If your artistic skills in forming a flower design fall
somewhat short, never mind. As the chef, you can call your
design whatever you want!

Fun Facts
The
real differences between sea salt and table salt are taste,
texture and processing, not in chemical makeup. The processing
of sea salt leaves behind trace minerals and elements
depending on its water source (example, Cayman sea salt is
said to be high in both).
Summertime finds people
running around in their bare feet more than usual. Bare feet
exposed to public walk areas and parking lots eventually
accumulate sweat, dead skin, and other factors to produce an
unpleasant odor. To relieve that not-so-pleasant foot smell,
soak feet in warm gelatin water first (either your own flavor
of choice or non-flavored) before rubbing them gently with a
mixture of granulated sea salt and gentle foot soap, then
rinsing and patting dry. Ah, fresh feet!
Summertime
can also mean a build-up of dried skin elsewhere. While soap
is the oldest cleanser around, it can be harsh and abrasive
without actually replenishing your body's minerals. After a
gentle, soaking bath or shower (try adding sea salt), rub the
feet, hands, and elbows with a combination of sea salt and
gentle cleanser. Then rinse and pat dry. Your skin will feel
soft and refreshed.
Want an inexpensive facial masque,
ladies? Try painting water-soluble Elmer's Glue on your face.
Let it dry. Then, peel off the dead skin and other debris that
covered your complexion. Then use the mixture of sea salt and
gentle cleanser for a smooth complexion.
If you enjoy
summer reading by the seashore, be reassured that your supply
will not run out. A new book is published every 13 minutes in
America. Try loading your favorites into an e-book reader
(some let you read at a sun-filled beach). E-book readers let
you take notes, save clippings, and mark your place easily.
Summertime can mean bugs, but not all bugs have the
mosquitoes' nasty reputation. Some bugs have a warmer, fuzzier
status such as ladybugs. Ladybugs like green plants and
leaves, both of which are found near water, and they're
harmless to humans, good for the environment, and pretty to
look at. However, look with the intent to release as ladybugs
keep the less desirable bugs in check.
If you were
bitten by the unfriendly kind of bug, leaving an itchy welt on
your skin, rub with a paste of sea salt and gentle cleanser.
Leave the mixture on the bite for several minutes, then rinse
and pat dry. Sea salt can help remove the toxins of the bug
bite.
June 21st is the first day of summer, the
longest day and the shortest night of the year. The word "sol"
and "stice" combine from Latin to meaning "sun to stand
still." As the days lengthen, the sun rises higher and higher
until it seems to stand still directly overhead. By the end of
July, the days begin to grow shorter again with the sun moving
slowly down the horizon.
