Featured Recipe - Four-Cheese Pie
A mouthwatering medley of four cheeses and spinach, this tasty
pie provides just the right blend of nutrition and flavor for
any noon or evening meal. The recipe serves 8 and can be
prepared in 50 minutes.
Ingredients:
- 2 (9 inch) unbaked pie crusts (room temperature)
- 15 ounces ricotta cheese
- 2 cups shredded mozzarella cheese
- 2 cups diced Cheddar cheese
- 1 cup grated Parmesan cheese
- 1 (10 ounce) package frozen chopped spinach, thawed and
drained
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon ground nutmeg
Preparation:
- Preheat oven to 350 degrees F.
- Press the bottom pie crust into glass pie dish.
- In a large bowl, combine ricotta, mozzarella cheese,
Cheddar cheese, spinach, Parmesan cheese, salt, pepper and
nutmeg.
- Mix together well and pour into bottom pie crust.
- Place the second pie crust on top of filling and trim
edges.
- Bake in preheated oven for 40 minutes. When cooked, let
the pie stand 10 minutes before cutting it into wedges.

Fun Facts
Do
you love watching movies while on vacation? Thomas Edison
created the idea of movies in 1888 from watching someone
sneeze. He was looking at still sequential pictures of someone
sneezing and realized that if he viewed them quickly in a
sequence, that he could visualize the sneeze, and therefore
make a "movie" (MOVE -IE - the picture moves).
The art
of making popcorn, another beach vacation favorite thing to
do, has been around for a while. In southwestern Utah, a
1,000-year-old popped kernel of popcorn was found in a dry
cave inhabited by predecessors of the Pueblo Indians. (Kernels
older than that are probably under someone's sofa cushions
somewhere in front of a TV.)
In an average bag of
popcorn, the number of yellow kernels will outnumber the white
ones by 9 to 1.
Americans today consume 17.3 billion
quarts of popped popcorn each year, with the average American
eating about 68 quarts all by him/herself.
The ancient
way to popcorn was to heat sand in a fire, then stir kernels
of popcorn in when the sand was fully heated, then pick out
the popped kernels. In 1946 Dr. Percy Spenser, a scientist
with Raytheon Corporation, experimented with the early
microwave oven, "magnetron" vacuum tube. To everyone's
delight, he heated corn kernels and was rewarded with popcorn.
So, given your choice of hot sand or microwave, go with the
microwave; it's faster.
Do you love reading the
newspaper funny pages or comic books while on vacation? Comic
books in the U.S. originated as oversized magazines that just
reprinted comic strips from the newspaper, but to jazz them
up, they added color. People called these strips "the
funnies." Eventually, the demand for comic books exceeded the
source. So in the late 1930s, the first superhero, Superman,
in magazine format became Superman comics. |
